  How to select seasonal blooms with confidence, balance colour and texture, and shop smart for at-home recreations.

• Conditioning Common Flowers
  Essential preparation techniques to ensure longevity — from trimming and hydration to handling delicate stems.

• Working with Roses
  How to showcase big, bold blooms (including reflexing roses) for maximum impact and a modern, sculptural feel.

• Sustainable Construction Techniques
  Creating structure using environmentally conscious mechanics — no floral foam — with reusable, low-waste methods.

• At-Home Care & Longevity
  Practical tips to extend the life of your arrangement and refresh it beautifully over time.

Known for his thoughtful, terroir-driven wines, Mac has built an extraordinary catalogue of vintages — and for one night only, he’s opening his cellar to us. 

Across seven carefully curated courses, Head Chef Oscar Holgado and his team will serve you dishes that highlight the best of our region and the season. Dishes designed to complement and elevate Mac’s wines. Each pour, every mouthful, tells a story of provenance, patience and passion.

Join floral expert Ellie McCarthy of Cotton Flower Studio, for a festive floral workshop. Start the morning with a barista coffee followed by 2 hours of step by step tuition creating anatural wreath using fresh foliage and beautiful seasonal materials.

The experience continues with a sumptuous lunch by Chef Oscar Holgado, whose culinary journey spans Michelin-starred kitchens in the UK.

Surrounded by the charm of the hinterland, guests will be guided in a step by step 2 hour workshop by expert florist Ellie from Cotton Flower Studio.
